I turn it off if the car will sit a while because I had another car that grew mold due to the precipitation that had let it grow on the evaporator.

I voted for #4 in jest.
However, to note - half of the year, the AC doesn't run or barely runs in our cars because of the sh*t season called winter (only redeeming features of winter are hockey and skiing). For winter, basically the heat is on full blast all the time, and I leave that setting as is too. Things may be a bit different for me this coming year, as I will drive my recently acquired A4 most of the time, instead of the C55.

In winter, or WHEN you have a lot of moist in the car, use the AC!
It dries the wet out !
And it´s good to use the AC now and then, even when you don´t need it.
