My first Mercedes- building a C43
A little background, it will be my wife's primary driver, coming from a Lexus GS350 F-Sport.
I drive an Ford F150 daily, a Porsche 991 TT Cab in the nice weather and a Radical SR3 RS really fast on race tracks.
What are the must haves for a Canadian first timer?
Boxes I have check off so far:

Thoughts, opinions and of course...first hand experiences, are all appreciated!

Personally I find the $2700 for the nannies not only expensive, but it is also the most likely feature that you'll turn off because many people find them annoying.
On the seats, they look awesome, but I find them really tight, and I'm tall and thin.

I just noticed you want open pore wood. Definitely the best option, but you should know it's on constraint right now so you could be waiting for quite some time if you're ordering and don't find one already in stock somewhere.

By on constraint I mean there is a hold or lock or whatever MB calls it. I've heard that there is a shortage and that it could be as late as Feb before you can even order with that option. I'm actually trying to get a more solid answer right now from one of the Corp stores in the GTA. There should be ones in inventory with open pore wood. I've seen a few white ones with most/all options that you're looking for.

Getting opinions on the performance seats will end up being a holly war. I have seen every size person love them and every size person hate them... The key is trying them for yourself, and spending about 20-30 minutes adjusting them (and optimally, driving with your adjustments if possible). You dealer should have a C63S or AMG GTS with the 555 AMG Performance Seat option. (CLA45's have the 555 option, but the cabin of the CLA is a bit too cramped...I would use that as a last resort).
Personally, I think if you spend the time to adjust them, you won't want another car without them.

Wow I think I'm coincidentally had a very similar situation as you are having now.
I used to live in Canada, and my last car there was a 2013 Lexus GS 350.
My opinion, the Intelligent Drive package is a worthy option if you are planning using it as a commuter car in a lot of boring highway driving in heavy traffic. I have it on my C63 and it was really useful if the situation meant I couldn't drive spirited.
I would not get the seats unless you are planning on tracking the car, or REALLY like the look of them (I admit they do look damn cool).
In terms of resale, the Intelligence Drive package is far more likely to retain more value since it is a utility based package.
With that said, it is worth considering that Canadians get a good deal compared to Americans on the performance seats. In Canada it is $2300 CAD. In United States it is $2500 USD for some reason.

That's about it, perfect! That us what I'm getting like yours plus leather. I have the intelligent drive and it was something that my C400 came with. Would I ordered it? No. Aside from the Distronic Plus which encourages texting /driving the other stuff is overkill.

I ended up including the Intelligent Drive Pkg to the build and confirmed my order.
Looked at leather but preferred the Artico/Dynamica w/ red stitching.

It's all a matter of opinion. I opted for the sport seats as the performance are a little tight and the hard plastic gets REALLY hot in the summer here.
As far as the "nannies" go, I LOVE them. 360 camera is incredible for parking and making sure you can get just close enough to the curb without rubbing and to stay as far away from other car's doors as possible.
The steering assist and adaptive cruise are GREAT in traffic situations. I've gone from 80mph down to 0 and back up to speed with everything in between without having to touch the brake, gas, or fiddle with the cruise settings. Very handy IMO.
Again, it's whatever works for YOU. If you don't think you'll use those things, then don't get them. Go test drive the AMG seats and see how they feel.
