The LSD was an option only on the 507. Mine did come with one. It helps tremendously.

Similar thought here. I was debating to go up to 265 or 275. 275 will up the rear end and change the dynamic unless going with a aspect ratio of 25, which mostly will be a poor fit for Jersey roads that are full of landmines. With 265, not sure how much difference it'll make. The stock yoko on the my 507 seems decent enough, though VERY LOUD.

the 30 is a % of the width, so 30% of 275 is more than 30% of 265, = taller.

Yes, 507 comes with 255/30. 275/30 will up the side wall by about 1/4 inch.

I put a set of OEM 255 when my rears wore out. When the next set goes I'm getting 275 rear and 245 front in PSS.

Yes. During hard cornering, a 275-size tire mounted on a 9" wide rim will have way too much sidewall flex. Go with a 255 or 265. You won't notice the difference in grip, but you will definitely notice the back of the car squirming around with a 275 on the OEM rims.
