I've also thought about something like that using a decent car seat and some sort of pedal/steering wheel arrangement.
Between the PS, Xbox and ?? What is the best platform?

I think the pc is the best route. It's an Rseat rig and monitor stand. They make and ship them from Bulgaria. The build quality is top notch.
I have the Thrustmaster RS 500 wheel and pedal set with the THR8 add on shifter.

That's hilarious! Priorities, it's all about priorities. Our living room, kitchen and front entry are all wide open. Besides, when we have people over everybody hangs out in the kitchen. And Everybody waits in line to drive the rig!!!!
Beats any pool table.

Nice setup Bigtickets. Mine isn't so dedicated lol, basically I pull my monitor over to the side of the desk that has the wheel when I want to do some racing. Its a G27.

iracing is what I run. I can set up any track and run it before I go there. I'm not familiar with RaceRoom or project cars? How are they?
