Just look at the dyno I posted of a c63s.it makes it's power all the way to 7k and is missing 120rwt that your car had.
Your probably miss firing with your wire hack piggyback and the STOCK ecu is saving your car cutting timing and dumping fuel after 5k.
I'm done but here is a healthy c63s that does not look like an 80s muscle car that only revs to 4000 rpms then dies up top.

No one here is disputing a modded 205 is fast as ****.we are calling out a stock car is making 571rwt and 600rwt with full exhaust.
The dyno I showed you has 4 pulls all bearing 480rwt and that is exactly what a healthy c63s is making*

Quick question, if I got a car with a graph like OP's, then should I just upshift at around 5.5k (slightly past max HP)? Upshifting at 5000-5500 and losing 2000 revs would put me at the same power level as wringing it out to redline.

Yea that dyno sheet is indicating you have a problem with your car. Instead of trying to gloat about your numbers, use your dyno sheet as a tool to diagnose the problem with your car after 5000rpms. Are monitoring knock? How does the timing look throughout the powerband and specifically after 5000? How is the air/fuel? If you dont know these answers then you should go back to the drawing board and check
If you put downpipes on your car and what appears to the rest of us as a piggyback/tune, then perhaps your turbos are running out of steam in the upper rpms which is why they fall off. Either way, needs to be fixed and your car will be much happier. Those turbos should peak around 5000 (which they do in your graph) BUT they should hold steady till redline.
