An inexpensive OBD2 scanner should be fine for checking sensor readiness. I use a cheapo bluetooth OBD2 device and Torque Pro app.
Ok ... where would I see this? I flashed the original tune back in and took live data screen shots prior with the old but don’t see an obvious parameter to indicate “sensor readiness”.
interestingly, the units of measure are US on the tune and Metric in the original...

You can’t see it with the handheld the you are flashing with, you would need a cheap obd scanner or a Bluetooth dongle and the torque app works well. Otherwise just drive it a bunch, a few days to a week and you will get everything to ready.

I used a cheap ODB (Ancel AD310) to read live data... Is that where it is? or do I need something else to create this custom gauge?
What you have is a standalone reader. That should be able to do the same thing right on the screen, but you'd have to read through the manual. Look for an "Readiness" diagnostic option.
What I'm using is a simple OBD2 Bluetooth dongle that needs a phone to display the sensor outputs. Something like this:
I then downloaded the Torque Pro app from Google Play and configured it to read the bluetooth dongle. All in, I spent probably $20 on the setup, and have been using it to diagnose and clear codes for years. Paid for itself many times over.

Yea, that looks like it. "INC" means incomplete. You need to drive a bit more to let them finish. The Evap system actually needs a day or two to be ready as it does an automated vacuum test while the car sits for a long period of time
Ok... when I read the “since DTCs Cleared”. They are ok but “this drive cycle” section... many are still “INC”... which does Emissions look at? Should I drive it a few more days?
I haven't used your exact tool, but I think you are good. "Since DTCs cleared" readiness should mean that you've done enough driving cycles after resetting the computer for all emissions sensors to monitor and read that everything is in order. "This Drive Cycle" is supposed to be the status of all sensors since the last time you started your car. Those should check good after driving a little, but I don't believe OBD inspection looks at the drive cycle status. They often test immediately after starting the car, in which case most of the drive cycle statuses would read INC.

I had this happen also, Eurocharged gave me a tune with the O2's turned off and I had no idea until I went in and failed after it had been on the car for months and months - emailed them and they let me know they had turned them off without telling me.

Well that's crap. I should probably check mine so I don't get a nasty surprise when my inspection comes due.
A. I have all the answers now... just passed
B. OMG I’ve missed the tune these past few days... Eurocharge can do whatever they want... the tunes are great. Just reflash 1-2 weeks prior and drive it a lot.
The results IN THIS DRIVE CYCLE are in fact what matter. I confirmed with the Emissions tech and luckily mine all cleared when I tested it again while in line at the testing center... they were not all good last night.
For future readers, I drove the car for three days on the highway commuting, traffic and highway speeds, and local driving. Total driving time 3 hours and they did not all register... the extra 30 min to the center today luckily pushed me over the edge.
The tune will be back in by nightfall. The downshifts are so boring without the tune and the engine feels far less aggressive.
