at 379g/s i'm seeing 27.8inHG with the factory map sensor. wouldn't really use that as any basis of comparison. at idle i'm seeing 4g/s and 9.2inHG

The curtain flow area of a Hemi 5.7L is significantly lower than our engine. I understand what you are saying but ultimately it all boils down to curtain flow area and not DOHC vs SOHC.

I would definitely look into the carbon roof. Sounds like solid weight saving. BTW I am very much looking forward to your wide body built. I think you car would look great and might be one of my favorite build.
