Right now I want to stick to one car that can fit 4 adults comfortably and also be fun to drive. Hence why I'm looking forward to the facelifted 2019 C63S sedan as my next car.
If I did the two car approach I would keep a slightly toned down daily driver (e.g. Audi SQ5 or S4) and have a fun leisure car on the side. A C7 grand sport wouldn't be my first choice, but it would work just fine.
If you don’t need the space then no question a turbo S. It’s a lot more engaging to drive. Remember that the AMG is not a true sports car; 911s are.
i don’t need 4 seats or a lot of cargo space.

It’s a question of what you will use the car for. Is it your only car? I would recommend the the C63S. A second car just for fun? I would carefully evaluate the two sports cars for condition before making my decision. I’ve owed both form factors and both are a lot of fun.
But Porsche makes the bests sports cars in the world, IMO. You get all of the performance and all of the creature comforts. Best gearboxes in the world for consumer products. Still subtle in nature to not draw too much attention. Hold value fairly well.
911 turbo S for weekends, and C63 daily driver. Skip the corvette... never like the designs on domestic cars. If this will be your only car, then definitely a C63. Can't imagine anyone would drive a 911 as a daily driver... not very confortable
