Gas pedal responsiveness

Reviving a salvaged 2001 CL600, I notice that there's a considerably sluggish feel to the gas pedal on this car. Compared to the car I'm coming from, which has a conventional throttle cable, the fly-by-wire system of the CL600 seems to lag at first, but leaps forward once it gets going. Is it supposed to feel like this?

I understand luxury cars are not supposed to do burnouts, but the restriction seems to be exaggerated beyond my expectation, which leads me to believe that something is still wrong.
