I haven't done one - but reading the WIS, it should not be too difficult. As stated you will need to take care with the airbag, and also you will need some force to remove the center nut holding the wheel. There is a torque value when re-fitting the new wheel.
Add some details about your model & location with the UserCP ^^^ and I''ll put some diagrams up here.

Check out this write-up for swapping the steering wheel on a W210. All modern Mercedes have a pretty similar setup.

a) removing the airbag
OK - here goes. I'll post in 2 stages:
a) removing the airbag
b) removing the steering wheel
Read all the instructions - not all apply to your W209. Also, I do not always disconnect the battery when the WIS advises. In this case I think that I would - even though you then have to 'normalise' windows, steering, sunroof, etc, when you re-connect it.
Note the torque for the steering wheel nut. The 2 bolts under the wheel holding the airbag are torx type.

I swapped mine out about a year ago, it wasn't too hard! It took about 20-30 min and I did need someone else to help me while taking out center screw. Just make sure car is off before unplugging airbag. Some people go as far as disconnecting the battery but I didn't.

Ok I uploaded some pics of what to expect when you pull the wheel in a W209. I swapped from a button equipped wheel to a paddle equipped wheel. The pics should be pretty self explanatory. Notice the small holes on the back side of the wheel. this is there the torx bolts are that release the airbag. You will need a T shaped torx to get these out easily. Also a big honkin Allen head to remove the wheel itself. If you are swapping a wheel with buttons its easy. If you want to add paddles or buttons and did not have them good luck!. The silver bar on the right side of the inside of the wheel is where all the controls for electronics plug in. DO NOT remove the clock spring under the wheel. I also did not pull the battery. As long as the key is not in the ignition the air bag won't fire. Plese see my extensive writeup on benzworld for step by step installation including a tool list etc. The wheel i put in is a factory AMG wheel with Alcantara. It is super nice and I got it brand new shipped from Sweeden for about $400 something. A fantastic deal at the time. The guy sells this wheel today for 699 plus 60 shipping.

Remove 2 Torx 27 or 30 screws behind the wheel. (can't remember the size) make sure key is off. Disconnect airbag (yellow and green) connectors, and 3 pin harness. Use a Hex 10mm to remove the center bolt. Remove wheel. Replace wheel.

2005 CLK500 Steering wheel issue
Hi,
My 2005 CLK500 start a while ago to gitch on the steering wheel gear pedals buttons. Some days it works and then it goes out and then comes back. Now, it doesn't come back and in addition, I lost all functions on the steering wheel as horn, volume, menu functions...
Some little garage told me that was the multi-function steering wheel issue and the part 230-460-05-03-9E37 must be replaced. Does anybody know if this makes sense or it is more the Steering Column Switches Clock?
Thank you.

My first ques would be that you have bad clock spring.
Anyway the cheapest option is to remove steering wheel and check switches with a multimeter.
