Good idea. Take it to another dealership.
I would not worry about the dash removal. It looks bad, but a competent tech will put it back and you won’t notice anything different. But I can’t see how it’s related to something behind the dash if you can feel the issue through the steering column.
These cars are well engineered, especially the GT - MB wouldn’t put a suspension adjustment in a spot that required the dash to be removed to access.

You can do what @Katie22 did by yourself. She did it herself. I would start there. Does not seem difficult.
Whe had the same kracks and sounds when driving a bad road and could not find it.
Whe tought it was inside the dashboard.
Then whe pulled open the hood and drove again and the sound was gone.
It was the rubber that comes against the hood on the inside.
Whe oiled the rubber and it was gone.
I hope that whe help somebody with this simpel solition.
