Best ways to keep car smelling as good as it looks?
Just need to find a way to contain it, but still have it exposed to air.
I used to place it in unused ashtray, now I use perforated container and generally find a place under the seats where the container will stay put.

Fabreeze might be considered a short-term solution. I believe it leaves a residue though.
Ozium is like puppy breath for a heater. Not enough ozone to really do the job.
Absorbing odors really doesn't attack the source. In a vehicle, there are many hidden places for the source to reside.
Short of taking the car apart, you have to "fumigate" the car with at least an ozone generator or better still, an oxygen plasma generator (OPG). The ozone generator will take longer to work since OPG units are far more effective at odor causing contaminants.
If using either one, do not sit in the car while it's undergoing treatment. Short-term exposure will not hurt you though. Ozone at high concentrations can cause lung irritation and people suffering from asthma should steer clear of high ozone levels.
BTW, "new car smell" is actually not good for you. There are quite a few toxins from the manufacturing process that offgas -- especially after a car has been sitting for some time out in the sun.

Finally, mold and mildew are constant companions while driving. Especially during the summer months. If you have allergies and get a reaction while driving, that may be the problem.

Second, I keep my car clean and wash it once a week.
Third, I use "Leather Scent" spray from Griots Garage once a week in all my cars. They all smell like brand new.
