NEW MB OWNER🎉 - 2011 E350 Cabriolet. I think the rear wind screen is missing from my air cap. Where can I get one (online maybe)? Also what can I do with media interface and what are the 4 dials for on the right side of the drivers seat (3 on left of passenger seat)

The dials are for the adjustable seats. Assuming they still work. I guess they do more than the standard power seats. Like lumbar support, but more.

Re: the thumb wheels between the seats - on the driver's side, the first one extends the seat bottom, second expands the seatback side bolsters, third expands the lower back bolster, fourth expands the upper back bolster. Passenger side is the same, sans seat bottom extender.

Congrats on the purchase, these are great driving cars and Air Cap is really great - with the windows up and Air Cap activated, you can cruise at 70 and hold a conversation comfortably and without being blown around. Since others addressed the seat, I'll hit your other two questions...
Regarding the windscreen... you should have what Mercedes calls a "Draft Stop" between the two head rests. The top of it is roughly the same height as the head rests and all three will rise if the top is down and you engage the Air Cap. I ordered an OEM Draft Stop from mercedespartscenter.com, it's part # A207 8600 200. I can't remember what it costs but I seem to recall it being under $100 and can be installed in 5-10 minutes.
Regarding the Media Interface... you'll need an MMI cable to use it. The OEM cable is pretty expensive for what it is, which is just a way to connect your phone to play music (I connect my iPhone via Bluetooth for calls). In most cars, this is a $5 AUX cable.
