My 300E is a 1990, so I guess that is why I don't have the rear fog.
But, what happens when one of the LED lights burn out - are there replacement bulbs or will you have to go and buy a whole new light again?

LED's are suppose to be rated for the life of the vehicle, they normally won't burn out. I guess if it were to happen, you could de-solder the bulb and replace it with a matching component.
So do you have the 8 pin connector on the drivers side or not? My 89 300E did, all I had to do was install the bulb.

Hmm, well not sure what to tell you, but it does sound like some of the W124's did not come with the rear fog, anyway you don't need it in the US anyway, so if you were planning on the LED tail lights, then it will be a easy install for you. No additional parts/rewiring would be needed.
