You have a torque converter drain so the fluid filter and converter drain are pretty simple if you follow direction on www.benzworld.org w210 diy section or on www.peachparts.com

You can also use the fluid for a 722.9.. transmission:
MB Part No. A001 989 45 03 13 - 7 speed fluid
If you are going to do the service yourself, you'll need a 9 qts. of fluid, trans fluid filter, dipstick tube lock, two seals (pan and convertor drain plugs), pan gasket and tools.
In order to calibrate the level correctly you'll need a 'dipstick' tool which has a calibration tip to measure the level correctly. The poster, ohlord, sells those or you can get them from the dealer or a third party supplier like autohausaz. You can actually get everything needed from autohausaz with some savings over the dealer pricing. But there are other suppliers as well.
The drain plugs are 5mm hex bit and torque is 24Nm on pan and 27Nm on torque convertor. Pan mounting bolts are T30 torx bit and torque is 12Nm.

Regarding when to change it, you will get a wide range of opinions about that on these sites. I think that is due to the fact that some people don't understand or believe in the superiority of synthetic lubricants. I changed mine at 125,000 mi (soon after I bought the car). And the while the oil was dark there was no noticeable debris in the bottom of the pan. A little fine 'grit' (aluminum, brass and graphite) is considered normal. Larger sized debris is cause for alarm.

BTW, you might examine the cap on the transmission dipstick tube. MB uses a little plastic locking pin to secure it. If it is black the transmission probably hasn't been opened since new. If it is red, it probably has been. Although that doesn't prove it has been fully serviced.
