There is a DIY by Gregs210 on changing the rotors on benzworld which gives tips on getting them off.
Star wheel adjuster is accessed thru one of the lug bolt holes and is located at the top. Might help to back the old shoes off some. There is also a small recessed hex socket bolt holding the rotor on. If you've done brake shoes before, everything should look familiar just smaller.
After installing new shoes, adjust until tight to hub (rotor) and back off 12-15 teeth on adjuster.

To help stretch the springs, get an old flat blade screwdriver and grind a vee in the tip, so you can capture the wire of the spring and push it toward its hole.
And you can use a flatblade screwdriver to push in and twist the hold-down springs.

They hardly ever wear out.
Are you sure you need them or just adjust?
If you need a diy with great pictures includes regular rear brake pads also
