E500 Stereo Upgrade Options

Although I like the factory stereo in the E500 (non-Nav, non-DVD) with Bose and in dash 6-pack, I want more power. Especially with the windows down and sunroof open. I also want to retain factory appearance in the front. I own an Alpine V12 4 Ch MRV-F340 amp and would like to hook it up to the factory system and add a sub, but I understand the stock stereo is fibre optic out and is difficult to adapt with aftermarket products. Does anyone have recommendations or experience in this area?

Your help is appreciated.

i also want to change my audio system, but no one could find a suitable size for the Middle panel.
