Question on new E-class dash display
What kind of information is provided in the center of the speedo dial?

You can see (depending on what options you have) your speed, tyre pressures, music tracks, distance from vehicle in front, route directions etc etc. This is just a brief example of some of the mulititude of information that is displayed.
If you get the oppurtunity to go into a dealership, I am sure the sales person would love to display this option to you.

What about information like water temp, oil temp, oil pressure, volts, inlet manifold pressure, fuel pressure, etc?
There is a coolant temperature gauge, plus warning light. Engine diagnostic lamp, which will give you warnings for malfunctions in fuel injection, (ignition system), exhaust system, No inlet manifold pressure, no fuel pressure. I think Concorde and the 747 have them though

The info available for display is dependent upon which options are installed in the car. The basic displays are outside temp, digital speed, the radio station selected, and a set-up screen to select some programmable features such as language, metric/american units of measure, ambient lighting preferences and just a couple of other things like checking the oil level in the 500. The driver selects which screen he wants to display while driving in advance, or when parked you enter Set Up mode.
Basically in Set Up mode, there is a button to scroll between "folders" of information, another button to scroll between the pages within that folder, and a 3rd button to choose one portion of a given page & hilite (select/activate) it.
So many cars have been around for so long without all of the guages you suggest, that they have been deemed unnecessary in a daily street driver. They are simply cars, not cruise ships with hundreds of items to be manually looked after by a Captain. Put it in drive, step on the gas & go to work.

By the way, someone mentioned that the Concorde is in a museum--that's absolutely right because the Smithsonian here in Washington has an Air France Concorde on display at their new hanger out in Northern Virginia near Dulles Airport. Of course, you can always find a plane sitting pretty at Heathrow's T4--even now.
