Huh....what about pressing the reset button on the left of the dash and ....no mo beep

I know thats not creative, but easier than removing the dash.

No it resets, activates or in this case deactivates things. It does indeed work with the beeper.

Here's a picture of a W211 cluster that is partially disassembled. You could just disconnect the big round thing (the beeper) and be done with it.

No need to remove the dash to get the cluster out or to disassemble it. Takes maybe 5 minutes.

Cool picture. Have you tried covering/duct taping the holes so the sound is not so loud?

1) Remove the bezel in front of the cluster... I find this easiest by bending it up where it is thinnest (right above the steering column) then getting my thumbs under it, and gently prying it out

2) Loosen two torx T20 screws on each side. These are captive screws so do not remove them!

3) Pull cluster out with hands and unhook connector on back.

If you wish to disassemble the cluster, you can remove the housing by prying on the (five I think) latches that hold the front and rear together. Then the front should come off; you can lift the works out of the rear.

Further disassembly is not recommended unless you are working with a cluster that you don't need, or don't need to drive your car around.
