I'd assume at minimum coding...

Yes, apparently you can, there is a guy named Vladimir who makes a plug in that will get you that and more. search this sight under " Full ILS activation" it's about headlights but that's your guy.

There’s a shop in Boston that has all the necessary equipment to do it. Costs $150

a dealer typically will NOT do custom coding since thats a 'feature' of the AMG cars which cost more, plus when a dealer codes options, they have to register it with MBZ's corporate databases for your VIN. some indy shops might do it, I assume thats what you're suggesting.

or as others said, Vladimir on ebay has a ODBC dongle which does that coding, it can be combined with others of his 'upgrade' codings

You can purchase a dongle, or code it in yourself, there is a video on YouTube with English subtitles. If you can get the digital gauges though which displays oil temperature, horsepower and torque, along with coolant temperature, that is way better than the AMG menu in my opinion.

I should dig up my ODBC ELM-327 bluetooth dongle I've used with a Tacoma 4.0L and a Ford 7.3L powerstroke, and see what Torque Pro can show in realtime on a W212. For the Ford, there's an app Forscan Lite, that knows all the proprietary ford stuff on multiple busses that the ELM327 can read. it knows all the diag codes for my 2002 F250 for all the modules. Torque Pro lets you build custom control panels based on whatever realtime monitors the car has which turn out to be a lot. On the ford, I can display things like transmission temperature, gear and TC lockup status and slip percentage, and more engine parameters than I know what to do with.

It has a lap timer and status of the traction control. But no transmission temp due to it being a V6 car... apparently the V8s have that.

Where is the oil temperature sensor actually located on M276 3.5L N/A ?
I can't find it in EPC. Is the oil level sensor also an oil temp sensor combo ?

I sure hope my 3.0 TT M276 has the same oil temp sensor or whatever combo it may be, but I can't find it in EPC or in WIS.

This statement on the variable timing info, M276 3.0L Turbo, would and should be the same for M276 3.5L NA since it also has the variable timing.

Yes, I am still chasing this engine oil temperature ...
Too bad is is a SIMULATED data based on 3.5L NA document.
Probably the same for my 3.0 turbo

OMG... even the oil temperature is calculated by software instead of measured with a 50¢ sensor 🤣
