Wood trim part numbers in burled walnut and open pore brown ash
I'm evaluating the price to replace the trim parts myself instead of using the dealership service bulletin discount. Buying each part of the complete kit costs an estimated $2600 list price (missing prices estimated), newer years may need fewer parts, and buying from a dealership website will certainly get you a discount. Here is my research about the parts and prices.
The trim kit is 17 pieces but newer years seem to use fewer of the pieces. My 2016 E350 Luxury with few options uses aluminum instead of wood for the four door armrest pieces and console left and right; and black for the instrumental panel center and temperature control face. It requires only nine pieces, significantly reducing the cost.
I got the parts and list prices from mbparts.mbusa.com, the official parts source. Missing part numbers weren't listed at this time so may be temporarily or permanently unavailable. I also spot checked a few of the prices at the two dealership parts sellers which I think are the cheapest, Autohaus Parts Delivered and OEM Parts Mercedes. They were 30% off list price! Those prices do not include their typical overcharging for shipping (though these two seem to charge the least of any I've checked). Even with shipping, I trust that it's cheaper to buy from anywhere but the dealership.
Note that the pre-facelift 2010-2013 parts may be different from the post-facelift 2014-2016 parts listed below. As always, double check these part numbers before ordering, ideally against the electronic parts catalog (EPC), perhaps NemigaParts.
Here are the part numbers for each piece of the burl walnut trim kit as listed by mbusa for my 2016 E350 wagon:
Instrument panel left - 212-680-25-93 - $139 list
Instrument panel center - 212-680-59-08 - $125 list
Instrument panel right - 212-680-26-93 - $380 list, $266 APD/OPM
Console side left - 212-690-38-62 - $92 list
Console side right - 212-690-44-62 - $90 list
Knob base - 212-680-68-93 - $114 list
Ashtray front - 212-680-30-17 - $102 list
Ashtray rear - ??? not on mbusa
Temp face - 212-680-73-93 - $105 list
Front left door - 212-720-53-22 - $228 list. "walnut"
Front right door - 212-720-54-22 - $232 list. "walnut"
Rear left door - 212-730-59-22 - $236 list. "burl walnut, black walnut"
Rear right door - ??? not on mbusa
Front left armrest - 212-720-79-22 - $115 list
Front right armrest - 212-720-80-22 - $109 list
Rear left armrest - ???. #18 on diagram.
Rear right armrest - ???. #18 on diagram.
I don't trust that new burled walnut will resist fading so I'm planning to replace it with open pore brown ash. This is the entire motivation for my research; not to get bad trim again. These parts are almost the same price as burled walnut. I didn't see the armrest trim listed but didn't look hard because I'll keep my aluminum. I'd be glad if anyone could post pictures of of open pore brown ash in that linked thread.
Here are the part numbers for each piece of the open pore brown ash trim kit as listed by mbusa for my 2016 E350 wagon:
Instrument panel left - 212-680-29-93 - $105 list
Instrument panel center - 212-680-61-08 - $157 list
Instrument panel right - 212-680-30-93 - $216 list, $151 APD/OPM
Console side left - 212-690-79-82 - $110 list
Console side right - 212-690-80-82 - $84 list
Knob base - 212-680-66-93 - $206 list
Ashtray front - 212-680-17-17 - $110 list
Ashtray rear - 212-680-46-17 - $119 list
Temp face - 212-680-76-07 - $112 list
Front left door - 212-720-57-22 - $276 list
Front right door - 212-720-58-22 - $252 list
Rear left door - 212-730-63-22 - $240 list
Rear right door - 212-730-64-22 - $236 list
Yeah, and carbon fiber trim is like $1000 for each piece.

Impressive & commendable
Your detective work is really good, & sharing the information is very important.
I agree that future fading of 212 replacement burl walnut trim is quite possible, as these pieces also most likely lack the UV component in the wood varnish, as did the original trim.
Already, in less than 1.5 years of my replacing
my E350 W212 front door, console & dash trim, i can see that the driver door top piece is showing some color change, as that door is open & shut
multiple times daily & exposed to direct sunlight.
I actually put UV film on the insides of the front side windows, the windshield & the sunroof to
impede sun fading at the time of wood replacement.
My previous 2 Wagons, a ‘94 E320 & a ‘01
E320, had perfect wood.
The W212 series involved cost cutting in UV quality from Stuttgart & in the wood finishing.
The beancounters usurped the quality & design teams, sadly.
For those buying wood trim at the dealer parts department, i suggest asking for a discount.
i was offered 10% @ MB of San Rafael.
i do wonder about the open pore wood pieces as to longevity. It’s certainly is a different look.

I bought the 17 piece complete burl walnut trim kit (Part number 2126801293) on eBay for about $730 a month ago and installed it all myself. The same kit is now about $785, but still pretty good value compared to buying the pieces individually or from MB. I had my windows tinted with 3M Ceramic IR film and try to be diligent with using a windshield shade, so hopefully that will stave off a repeat of the fading.
I too searched around for an open pore alternative, but couldn't find anything online so I stuck with the burl walnut. I do like the look of the 'new' trim, so hopefully with a little care it will stay this way as long as I have the car.

How could an eBay kit could cost a third of list price unless it is a knock off or otherwise illegitimate? The kit 212-680-12-93 appears to be discontinued at mbusa and other dealership sites, so how are the eBay sellers getting it? Since it will take me a lot of work to replace, or cost someone else money to have them replaced, I recommend only buying original parts from a dealership.

Calling somebody else's product anything else w/o evaluating it or asking for recommendations from those who already have them is speculation as well, i.e. your word starts getting the same value as the eBay product you commented on.
NOTE: I am not affiliated to any eBay seller, nor any parts manufacturer. I just try to be unbiased about these things.

I really like the open pore wood too, it would really fit my beige/brown interior perfectly. However, I am still contemplating sanding, staining, possibly stain with black first then re sand and stain in a comparable color stain as original and top it with a UV poly. Spayed on with a professional gun of course. The black would soak into to softer wood and remain after the re sand, causing the wood to have a more 3D dramatic effect. See, Curly Maple flame top guitar finishing.
