2021 G63 Rear Differential Leaking
So, today I decided to just take a look underneath to see if anything interesting was going on under there and spotted this. Has anybody else had this issue? Any input appreciated.

I'll check tomorrow under the car. I assume you mean that portion that you ran your finger along on the circular part?
If there's nothing on the garage floor I wouldn't be as concerned. I had my rear diff leak on my RR Sport and it stained the garage floor brown.

I just remembered that one day as I was driving on the highway, something hit the underside of the car, like a rock or something. That's probably the gash. And it does look like undercoating in the video, but it was soft and greasy to the touch.

This place is a joke.
You can see the undercoating bubbling on the diff where the hot fluid is in contact with the assembly, thus melting the undercoating and making it soft.

In your case it is very apparent due to the bubbling, but if you start wiping your figure on other items under the car, you will find that “grease” everywhere.

If your G has to go on a lift, demand the dealer uses the special fixture to secure it to the lift. They didn’t with mine, and it slipped because of the soft cosmoline coating, with my car almost falling off the lift.

This place is a joke.
The special fixture does not fit all lifts, so your dealer may not be able to use it.

It's not cosmoline, it's a specific underbody wax used on the G's to prevent corrosion. It specifically says if you do a repair, you need to re-coat anything you disturbed the coating on.
