Is there a different height setting between comfort and sport? If so, can I manually lower it while in comfort? I tried to manually lower it with the suspension button while in comfort but it didn’t move.
The manual has good information about this. Yes, there is a height difference between comfort and sport. No, you can't lower it beyond the selected drive mode (outside of exit settings and lowering the rear from the trunk).
My 53 I can change the suspension to to sport or sport + without affecting any of the other setting. e.g. I can be in comfort and switch just suspension to sport +
Yes, just the suspension is what needs to be set, not the entire mode.
Note that you can RAISE the vehicle (below 87 MPH --to the off road setting) without changing suspension modes. Just can't lower it for reasons only known to MB.
That's how mine is coded. Starts up in I* mode with my custom settings, and the automatic s/s is set to "remember last setting", which is "off" for me.
Does this “remote coding” get wiped after any software update? I have to recode my BMW after every software update. It’s not a big deal as I could do it myself, but this coding requires a third party.

It's certainly possible - in the 4 months I've had my car the only update I have done has been to the navigation maps. None of the custom tweaks were lost. The coding company I used will stand behind it and make the changes again if they happen to get wiped out. You'll probably find the same with anybody who does the coding for you. It's not convenient, I'd agree.
