Fan is still running for a couple minutes after the car is shut down?

Just drove my new GLE back from the dealership. This is my first Mercedes.
I found the fan under the hood was still running for a couple minutes after I shut down the car .
Is it normal ?

YES. under certain conditions it will run but not like 30 minutes. If it is doing that take it in.

normal. It is just cooling the turbos. You might also hear some light tick-tick sound and the is normal too.

Another feature that will keep a fan sound on is the Rest feature on the climate control which will continue to use residual heat/cooling for the cabin for up to 30min while ignition is off. This only occurs if you push the Rest button after turning off the car.

On my Audi, the fan (headlight fan) would come on anytime the engine was off and the main headlights were on to keep the electronics cooler. Does the MB do this too? I've never paid attention.

That was probably an Igniter, used on older pre LED high intensity lights (HID).

Just curious, how does it cool the turbo(s) unless it is cooling the oil to the turbo?

Oil circulation from the massive 9 quart sump.
