Take your halogens and your new projectors to a car audio shop. They're experienced with automotive wiring, and should be able to do it much easier than if you were to bring it to a mechanic (My MB mechanic recommended this too)
They should be able to look at the wiring from the original halogens and modify the wiring housing on the new projectors to match the old wiring setup.

They seem like they'd be plug and play since they have their own HID kit with it. Anyone have any experience doing this?

If all works then no problem. If not (eg: only high beams come on) compare the wiring between old and new. If different, bring to car audio shop. Dealer will just overcharge you, fudge it up, or say it can't be done at all.
