That seems about all you will find on a used / cpo car.
Impossible to find a Xeon headlight option much less AMG. Still cannot believe Xeon is not stock on a $60K car.

I have been searching for right car for several months and have never seen one without P1.
I think all have the running boards too. A few have the HK upgrade.

In terms of the premium options it is hard to find but not impossible. the CPO i got is almost loaded (except for the 360 camera, ambients, BSA, distronic plus, ventilated seats, heated/cooled cups, heated steering wheel) now some of this is not absolutely needed, but it depends on what you want. You have to know what it looks like on the inside/outside to know that the car you want has that option, and you have to look extensively. The people here who found the CPO they wanted say they were looking months to find the one they wanted with the right price. Also +1 when you say it should be standard options.
For example, the Xenon's and HK7, the xenons are a single lighbulb with the LED turn signals. The HK7 the front two tweeters has the "harmon/kardon" word in silver lining. the ambient lighting you'll know by two things, 1 is the illuminated door sills, and 2 is the courtesy light on the rear passenger doors.

to keep it quiet, but i would think 75% of the people who buy with the wiring dont in fact use it

It was not standard, I custom ordered my 2014 ML 350 Bluetec without it because I didn't want to spend the extra $4500. The only thing in that package that I cared about was the backup camera. I bought one from ebay for $100 and installed it myself

One more thing that didn't cost extra that I really wanted was the beige interior, it looks so much more inviting and more luxurious in my opinion.
