Can I cut mercedes/AMG rotors?
I was planning to do a brake job in the near future. I checked out my front e55 rotors and noticed a pretty good ridge on the inside of the rotor. Most service shops have told me they always replace rotors on mbs because they are soft and loose so much material. Any suggestions if it will still be within specs? 250 a piece are making me think to try cutting if they are within spec but I would hate to risk a cracking or warping issue.

If they are in spec, leave them alone. Even the dealers won't turn them on a lathe. I don't think they even have a brake lathe!

The rotors for the W202/W208/W210 are still expensive, but much cheaper than they used to be. Get used to maintenance prices on AMG cars.
