2005 E55 AMG or 2006 S600 AMG Sport
The E55 will be brute force with the supercharger.
The S600 is faster though with luxury and safety.
Mods for mods the E55 will cost more to reach the 600 performance once modded.
I see your coming from a Viper, neither will be as aggressive. That's why you need the
S600 since it will be the opposite feeling of the Viper, yet same deadly speed.
Normally I'd say go for the E55 for the fun to drive factor, but considering you have a Viper already, the S600 is the perfect compliment to it. Fast, but much more comfortable and refined. Plus mods can get you very fast for relatively cheap.

I agree, M5 or even Alpina B7 if you want something that resembles "handling."
Otherwise, separate handling and speed from luxury and comfort. You will never be satisfied either way if you try to combine both.
I sold my W211 E55 after 6 months of ownership, a trip from LA to SF, and after driving it in the canyons.

The resale is not bad if you pick up the S600 already used and purchase a top quality warranty. I did just that.
My S600 just went in for service and is getting a multitude of parts replaced (coil packs, wheels bearings, ABC parts, etc.) and just had all of it approved through warranty this past Wednesday.

To contrast, the e55 is a more comfortable daily driver with stronger torque. It loses some in handling, and the driving experience is not as connected, but it is more livable for regular use.
The s600 takes that further, heavier but smoother and more refined. There is much less drama when accelerating. The m5 will jerk your body back every gear change, he s600 will just pin you back.
Really 3 different cars, depends if you value pure performance/handling over something more refined. All 3 are fantastic cars.
