Keep the fluid full and don't let it run dry. If you uncap all of the bottles and have them ready, you can do it with one person. You need to pour relatively quickly, but you can definitely do it by yourself if you are prepared.
I went to home depot and got a 5gal bucket + a lid. Plus a 10ft of clear vinyl tubing.
Put the vinyl tubing on the return line and wire tie it tightly so it doesn't come off. Drop the other end in the HD bucket and do the flush.
Then put the lid on the HD bucket and drop the fluid off wherever they accept motor oil for recycling.

Pull hard on the filter and it comes off. Then push the new one on and you're done.
I flushed the system with the existing filter because I didn't want to contaminate the new filter with old fluid.
Get the latest part # for the filter, because a few years ago (5-7 years?) they updated the filter and it has smaller holes to trap more gunk. The new part # is much better. Most places probably don't have the old filter any more, but be careful if you buy from eBay or places like that. Any dealer or online parts store (ECS Tuning, FCP Euro, AutohausAZ) will for sure only have the new filter.
Steering uses the same pump, but it has a separate reservoir. You'll have to flush that separately.
One way to do it (that I use) is whenever I'm under the hood I suck out the reservoir of fluid and pour in new fluid. If you do it 2x/yr when you do oil changes, you end up replacing the fluid completely every 12-18 months which is perfectly fine. You can of course go through more work to do it the "right" way which is to disconnect the return line and flush. I find it much easier to just swap fluid every time and having year-old PS fluid is fine with me as nobody flushes it every year anyhow.
wonder why Mercedes say theres no service for ABC fluid when there clearly is, my steering fluid has gone brown, not green like suspension fluid so want to flush complete system, no problems with it but steering fluid shouldn't be brown should it.
The filter is located here if it helps:

Thanks to alx saved me from purchasing a tool
Simply lift power steering reservoir and remove the bracket held with 2x 10mm nut
and the ABC reservoir bracket 1x 10mm nut
12v oil pump was used for filling and suction fluid
Blanked off the return reservoir
It is a bit messy though.
I do ABC oil annually. I put 20,000 a year on my car.
you certainly never waste your time with a ramp, or unbolting wheels - why do it any other way ?
