in theory, you want the engine to smooth out anything that needs smoothing and get all the seals and whatnot to really seat themselves.
how important such behavior is remains a much debated topic. apparently, european cars sometimes have much shorter break-in periods than their identical american versions (eg: Porsche quotes 1200 miles, but apparently outside the US it's 1200 km - substantially less than 1200 mi).
definitely there should generally be no reason to freak out if you downshifted. or if you accelerated fast. or if you exceeded the "do not exceed" speed or RPM limit the documents discuss.
what you don't generally want to do is redline the car or full-bore push the engine until everything is "settled in". so if you did a downshift and it went from 2000 RPM to 3500 RPM, stress not. if you pegged the rev limiter, well, don't do that until the engine is for sure ready.
remember, there are data computers in all these things. failure to follow the break-in procedure, which was provided to you in like three places if not more (including stuck to the windshield right in your face!) may in fact be a trackable offense. the OBDII computers often store extremes data.
