I am in the market for an AMG GT 53. Can anyone tell me the difference between 2020, 2021, and 2022?

I have '21. I don't think that there were any differences between '20 & '21.
for '22, I understand that there are a new wheel design and some color combos offered. and the biggest change is the steering wheel.

Did the 2020 MY have MBUX or COMAND?

20 models have old COMAND....21 models were the first with MBUX.
22 models have a new steering wheel.

I think 22 models also had options to get red calipers or the silver.

Not aware of any differences beyond that.

In some strange ways, I actually prefer the COMMAND system over MBUX, as an Apple CarPlay user.
on a same size display, the CarPlay on COMMAND is full screen with wide aspect ratio.
on MBUX, for whatever reason, Mercedes decided to not utilize the full screen and it's narrow aspect ratio. I lose so much map real estate space using Waze or GoogleMaps.

I might be the minority opinion, but I'm not sure if MBUX does anything better or extra over COMMAND, other than it looks new/sexier.

Biggest advantage is that it is more responsive and faster

‘20 models don’t have a touch screen, other than that its just interior color options and steering wheel options
