Are you talking about engine temperature or oil temperature?
Oil temperature rises quickly with every aggressive run. If you do a 0-60 run a few times in a row, it'll go to 110 C, then will rise a few degrees with every additional run. I think Juicee got it up to 125 before.

The one all the way to the right is the engine temperature. If you want oil temperature, then navigate through the menu of the instrument cluster (through the left two buttons on the steering-wheel) until you get to the screen that shows what gear you're currently on. That screen will show you the oil temperature as well.

My oil temp goes to 111.-- In the screen with the correct gear. engine temp seems to stay around 90 on the right side of the dash(its hard to tell-not digital)

Correct, the oil temp is on the screen that includes the current gear. I have gotten mine to 117 once, but it fell quickly after I stopped doing what I was doing.
On the right is the water temp.

In the interests of optimal in-engine friction and fuel economy, the temperature of the coolant can for example be lowered to 80 degrees Celsius under partial load. Under full load conditions the temperature is raised to 100 degrees within milliseconds to achieve the best possible engine cooling. The thermostat controlling the coolant temperature receives its instructions from the engine electronics.

E-63 Engine coolant Temp
I've looked into several of these t-stat assys. They have a 100* C vernatherm ( E-55 is 87*C ) a dual spring & dual valve assy around the vernatherm. It also has a heating element built in (Controlled by the ECU) that heats the center push pin of the vernatherm. While when ignited by the ECU , will open the valve off the seat farther. This is very similar to the Diesel, assy. I've modded a few of these assy's but got no feed back. So I can only guess they did not work up to expectation. Cheers ___PTEngineering
