Widest tire on a 10.5 rim??

Fronts:
9" with a 25 mm offset
9" with a 36 mm offset
Rears:
10.5" with a 45 offset.
I read someplace that the offset had to be between 39 and 42 for a 10.5 to not rub on the rear. According to this thread and what some people are doing that does not seem to be the case and depends more on the tire.
Two questions:
I think I have to run the 25 offset in the front with a 245/25. Is that correct?
If I get a thin sidewall tire, can I run the 45mm, 10.5 rear with a 295/25? Or should I consider shaving it down 3mm to make it a 42mm?

I'm reading earlier in this thread that the Hankooks should work in 305 without rolling of fenders.
Fronts 275/35/18 RS3s on 18x9.5 et35. No interference inside or out, lock to lock thru full suspension travel (have an ELM so easy to test). 285 would likely rub inside suspension and outside bottom wheel lining(full lock)
Rears 285/35/18 RS3s on 18x9.5 et45. Defn more than .25" room on inside which is all you need for a 295 tire. Plenty of space btw tire and fenders a well via full suspension range.

My detail guy knew a guy who rolled fenders and had the right equipment to do so. He only charged me $20 per fender to do it. I'm glad I did because the +42 fitment is very aggressive and looks great.

[EDIT: Google image searched and found several examples in smaller diameter rims. Seems like it's slight stretched but not much at all. I think I can live with it and it should give me clearance I need to not roll the fenders]
So everyone knows Hankook (and most all others) seemed to have stopped making 295/25/20 tires.
The rims I am getting are +45 front (10.5") and +36 rear (9"). Seems like 285/30/20 is the most available tire. I can get a Nitto Invo in a 295/25. I think the 285/30 is the proper fitment for the E55, but I am concerned about the stretched look which I don't want.
Anyone see any problems with my offsets?

I just ordered wheels and tires similar to your setup. My rears are 10.5 wide with 45ET and going with 305/25/20 tire. I plan on getting my fenders rolled. Did your fenders require an aggressive or light rolling at 42ET?
If you look at the fender and the very top center is 12:00, I'd say that rolling from 10:00 to 2:00 should get the clearance you need.
