Just the usual Fluid levels, coolant being the most important, it can leak in to the engine with no tell tale sign, other than an empty header tank. Look under car for any other leaks.
Make sure the battery (and aux batt) is/are fully charged.
Inspect under hood for anything out of the ordinary (rodent nest/chewed wires/sleeping cats ect.)
Because we have plastic tanks it is best to store these cars with as little fuel as possible, and yes a staibilizer is ok to use. Not a bad idea to put 5 gallons of fresh fuel in before you start up.
The tires will have flat spots and will take a few days/miles to get smooth, I store with tires inflated to 55psi it helps but still takes about 50 miles on a hot road @ 38psi front & 42psi rear for the tires to get round and smooth.
FWIW I always have a fire extinguisher close by when I do any start up.

How did you store it? That will tell us what needs to be done. If you prepped the car probably a simple fluid flush and battery charge. If you stored it full of old fluids and the tires are flat with dead batteries you probably need a bit more time to "re-store" it

new battery did the trick. car runs great
autoparts store said battery only up to 7 volts even though I charged it all night.
Power steering is a bit louder than I remember. Where is the dipstick for the power steering reservoir?

Open the PS reservoir and take a look inside.
