Considering wheel set with 36mm 9.5" wide rear wheels
Is this too much offset? Will it be flush or stick out past fenders? Car is stock and will remain stock suspension so lowering isn't a concern.

Please note that the width of a low-profile 285 on a 20" wheel (section width) will be less than the width of a 30 or 35 on a 19" wheel. Often the 20" will fit where the 19" won't.
As you mention, every combination of tire model and wheel offset is unique. When you are that close to the edge, it doesnt take much to go over.

Offsets
I think you misquoted your offsets, both of my custom set of wheels are around 39-41 with 10- 10.5 rears. W212 chasis have very high offsets.

I'm running 20x9 +28 front and 20x10.5 +34 rear on my 2012
My 2010 had 20x10.5 +29 rears with rolled fenders.
W212 only have high offsets when they are stock height. Once they're lowered, totally different story. I have to run 15mm spacers front and back in the winter on my stock 19" wheels.

Those look great how much did they cost you without tires? If I were to get those same wheels without a drop would they look alright?

Yes this setup works perfectly on stock suspension. Very flush, without being overly aggressive. The wheels are Forgestar F14. I'm running 245-30-20 / 285-25-20. But next year going with 255-30-20 / 295-25-20 now that the Supersports are available in the front size.
