I am seriously considering this 2018 E63s, but torn a bit since it has the AMG Performance Seats. Seat fees ok for me to sit in, but was wondering if over the long term these would be something I regret in day to day use? (I almost never go to the track). Thanks.

I do a few rallies and track days a year and I think the seats are great. It is all personal and there are tons of threads on this. Just did a 5 hour road trip to my brother and drove 5 hours non stop and the seats were good.

You're not going to get much usable info from those threads or any recommendations you get here. How comfortable a seat is to you depends on the seat and your physical structure. If you're married and plan on taking any trips you'll have to come to a decision for both of you. There's a thread here where the OP was looking to swap out performance seats because his wife hated them.
Actually sitting in the seats is probably the only way to make an informed decision.
