2016 C63 Edition 507

You can get info on numbers made by checking with your MB dealer or go up the chain and check with a MB head department/office in your Country.
AFAIK the C204 C63 507 will end production in late 2015 and MB will produce as many as there are customer orders for until that time, ie. there is no limit on numbers made until the end of the production schedule, the 507 is a special edition not limited edition

I considered the C204 C63 507 but have decided instead to wait and go for the new generation C205 C63 coupe, from everything I've seen and read up on so far it's going to be one hell of car and extremely good looking as well

Not sure if the sedan was unintentionally made as a limited edition or not, but it stopped production early or earlier than the coupe because the new W205 series sedan was released and as soon as the W205 was released all W204 production ceased.
In the meantime C204 production continued until only recently, because MB is ready to release the new series C205 soon.
AFAIK MB's plan was or is to have models in production for at least 4-5 years before updating, the W204 was in production since 2006, the C204 started in 2011, hence the new C205's being released sometime late this year or early next year.
When it comes to special edition models if a small number only are delivered to a particular Country, then they do sometimes end up like or are considered a limited edition because of their small or exclusive numbers, a very good close friend of mine has a 507 sedan and is hoping it becomes an eventual collectable, in some Countries like Australia people pay big money for sought after collectables.
Hopefully you get some info from your sources, but from information I have from MB the 507 was never stated as being a limited edition like for example the Black Series vehicles, again AFAIK Black Series vehicles and Edition 1 package vehicles are the only MB's that are stated as being limited edition by MB themselves.

Owning a 507 is a very good thing

With regards to the mechanical components sharing between BS and 507 you are right in saying that is what a lot of 507 owners reference to - but in actuality the BS is for the most part unique and different in so many other mechanical and technical aspects and if you drive both they feel different for sure, also the fact that the BS or in fact all BS's are coupes which are more dynamic than their sedan counterparts.
Regarding numbers try checking with MB North America/MBUSA they will have that information, or try MB/AMG head office in Germany

MB/AMG are production ready for the new C205 coupe series, so C204 production will cease.
However at this time you will still be able to acquire a new C204 507 from new stocks still remaining at some dealers, of course all depending what Country your in, there are still new 507's at a few dealers here in Melbourne Australia for example
