I personally think that would look great. If you want to be a bit more conservative you can do 8mm and 10mm

2) I would just go 8mm and 10mm then so it doesn't rub on the outside rear quarter panel
3) 245 up front and 265 on the back
Here is a 245 on a 8.5 ET 48 Front
Rear is 9.5 et50 275 rear
For the rear you have options (different size spacers 8mm, 10mm) on how close you want the tire to come to the rear quarter. With a 8.5 there will be no rubbing issue on the inside, but if you start to get close (using spacers) on the outside of the QP then there might be a small risk of rubbage if you are really low and hook a turn to quick or hit a big dip on the highway. Thus is life with lowered cars. I would do 245 in the rear as well to make it easy.
