I'm a belt and suspenders guy from Missouri so I have to check everything 42 times.
I have a RWD C300 (W204). It uses 8.5 quarts of oil.
Am I correct in my assumption that I can pump MOSTLY ALL of its oil out using a "straw" sent down through the dip-stick tube? In other words, given that I do not have a 4-Matic car, the little fitting that seals to the top of the dip stick tube is NOT a requirement. For the last time, am I correct?

Yes, you can suck the oil out. I use the Mityvac plus. Works fine enough. Just be careful how much you put back in.
However, I do not know what you mean about the fitting that seals to the top of dipstick tube? You mean does it need to seal while sucking it out? No, because as long as the tubing is in liquid, like a straw, it will come out.
I recommend you use an approved oil though, like Mobil 1 0w40. Plus, the genuine filter, or the Mann equivalent (same filter).

Mac ~ some of the dealer evacuation systems seal the dipstick tube when evacuating oil. This is supposed to be superior when draining 4Matics with their sump configuration to accommodate the front driveshaft.
Not necessary when draining non 4Matics & you will get most of the oil out if you loosen the filter & allow adequate drain back to sump time from the top of the engine.

Mac and Glyn, thank you -- My confidence will improve after I've done it a few times. In the meantime, it is VERY helpful to have folks like yourselves to fall back on to be sure that I don't screw up my car. I try very hard to be sure it is always in perfect order, but with the world the way it is economically, its always good to be as self-sufficient as possible (or, as my wife says, I gotta get cheaper with my hobbies).

As long as you are methodical you will have no issues at all. Seems you are a methodical person so you have nothing to worry about.
