Spark Plug Change
Just did mine a month or so back and it wasn't bad at all. Just some intake stuff in the way so it takes time to get access and put everything back, but I recommend a universal joint (or wobble extension) for some of the tight spots back by the firewall. Oh, and my car has about 33k on the clock and probably didn't need it but I figured what the hell. Didn't notice much difference afterward, maybe a couple mpg's if any.

Plugs are 100 bucks max and 1100 labor? 225 per hour at 5 hours?
I would run away and like others said can easily be done at home in about an hour.

The top of the WIS Article says "for the M156 in 204 and 212", so if you have an M156 in a different platform and you're reading this, it may not apply to you.
I checked this spec for the pfl sedan and for the fl coupe and Black series.
Here's an example of what happens on a different platform with plugs torqued incorrectly:
Microcracks develop around the spark plug holes. The engine still runs, probably with full compression for quite some time, but why not avoid this, by using the proper torque.

Once you used these, you didn't have to clock anymore. They became the factory plug at one point.

People tend to forget just because it's an AMG, doesn't mean that you can't do you own maintenance if your inclined.
