Honestly I fell in love with open pore black ash when i first saw it in the C-class. That and the performance seats were a must have for me lol
With the wheels almost everyone is getting stock wheels unless you have an edition 1. No one else is allowed to order them because they don't have enough.

I can understand your dilemma above, I too think the same regarding the CF trimmings the only thing I would say is the piano black interior looks amazing and also has that expensive look about it but if it gets scratches it'll mess it all up, the CF is better in that regard if you can get over the look of it.
Not sure what other options are available there where your from but here in Australia I've been told that in time there'll be a full custom interior and exterior colours/trims options list to be had with AMG models, (other than the Designo range) which extends to a full range of custom leather colours/stitching/piping and even custom CF weave colours as well.
I've chosen the matte black wheels with exterior of car in standard MB iridium silver.

Also got the Night Styling and like everyone else, got the stock wheels.

Which MB dealer are you dealing with ??
They are also going to introduce separate AMG sections to all of their MB dealerships over time similar say to what Holden did with the separate HSV sections/dealer networks.
I've already seen a pic of one located in Adelaide think it was, after that happens is when they're going to introduce the AMG personal customization specific for AMG's only.
Back on the topic of interiors I recently looked at a W205 with the black ash interior trim as mentioned by some other people and must say it does look very nice, it contrasts superbly with all the metal silver parts and being a matte finish it will hide marks a scratches better than the piano black.

I have become good friends with some people there and hang out regularly there on weekends if I'm not at work that is

I like and concur with your initial colour choice above, diamond white is my favourite external colour for any of these cars, the ash wood trim you've selected is also growing on me too since seeing it recently and definitely both looks and contrasts better than the CF.
Just my opinion but not a fan of the iridium magno or any other one of those matte finish colours, they are definitely a maintenance issue and IMHO a car in that finish looks like it has been left in undercoat lol.
Regarding the wheels I'm not really "feeling" the current choices, for some reason in my eyes the twin 5 spoke looks much better on the 204 series shape and the lattice or mesh new style does not IMO suit the 205 at all, although I may have a totally different view after seeing them in real life.
I will most probably opt to go for a good brand (HRE etc.) and better design wheel than what's available at the moment from OEM for the 205 series.
I haven't ordered yet because I'm exclusively wanting the C205 coupe variant.
Carbon brake package at this stage from my experience from driving most AMG models on track days I wouldn't bother with, the spend for what you get vs any improvement is IMHO not worth it, especially or certainly if the car is for street use only I'd stick to the normal performance brakes - if you can call them normal - they stop more than well enough, they don't make noise and they don't suffer from any braking deficiencies in wet conditions and don't need an initial warm up period to become effective, I would only recommend ceramics on a full proper race car that's used predominantly on the race track.
But if they are what you want for your reasons, along with any other options choices your set on then just go for it either way you really can't go wrong
