How do you shut off the fan that is blowing every time I open the door?
When I start the car, the big screen always goes to the map.
How do I get to the tiles that I see on You tube that shows NAV, Radio, etc?
I can see Apple Car Play in the top left corner of the screen.
If I go into it, how do I get back to the MB system?
When they gave me a loaner car, I couldn't find a way to get out of Apple Car play.
I'm sure I'll think of more things as they come.

Is the engine hot? The cooling fan?
On youtube... Hmmm are you talking about zero layer? If so, hold the home button (the house icon and choose zero layer)
MBUX 2.0 has two UIs. Classic and Zero Layer. The latter is now the default. The home screen always shows the map. If you wanna switch back to the Classic UI with the tiles/icons, you press and hold the Home button until you get a pop up where you can toggle between Classic and Zero Layer.
As to how you get out of CarPlay the quickest way is again to press the Home button. But as mentioned above, when in CarPlay, there's always an app icon for the car's Infotainment system. If you tap that, it'll take you out of CarPlay in any car.
Here's an example. The Mercedes app icon in the second row is what gets you out of CarPlay and into MBUX.

Here are a couple of screenshots to show. The MBUX Home button (big round circle with a house) is your friend. If you are in the zero layer UI a single tap brings up all the icons to navigate to Radio etc. and press and hold as said brings up the UI switcher so you can switch back to Classic if you prefer it.
