LED courtesy light strip
I am REALLY happy with the way this turned out. I will be cleaning up the drivers side and installing the passengers side tomorrow.
The video while good doe not really do the light proper justice.

I actually have some exp with electronics. I could potentially help you with the color changing issue. Or if you look on the site you linked there is everything you need there to both power a massive amount of LEDs and also to change colors with out any other hardware. I have a feeling that this website is very expensive though.
Here is a good example of some cheaper stuff that works great. I have never used this stuff in a vehicle, but I do have a RGB strip from these guys and have it doing all kinds of color stuff.
