I own a 2016 AMG GTS Edition One

I would like to increase the horsepower to somewhere between 600 - 650. What is the lease invasive way to accomplish this gain?

Assuming you meant the least invasive method? If so, a tune is your best bet.

I love my Eurocharge tune, and I think they are running a sale atm.

Would I need to send them my ECU or do they send me a new one that I would install?

They send you a device that you plug into your obd2 port, you copy your ecu file, send it to them via email, they send you the tuned file for your car, you use the device to upload it to your car and you're done.
