What exactly does the dealer do for each of these services? Can I do these services myself and save some bucks?

generally looking around under the hood when you have it open to admire the engine

You can pick up the suction tank for the oil change at harbor freight tools,or Griots or topsider.
a good set of tools and you are on your way.

I have 55K original miles on the vehicle. I have already had plugs done a while back by the dealer. I never had the tranny done. I asked the dealer about this and his answer was as was posted elsewhere that tranny is sealed for life. I thought that odd and may either do it my self or have my local shop do it. The fluid and filter were never changed. The car runs well and shifts well.

A good deal is to change ATF AND filter every second or at least third service if you follow your cars service intervals. That runs down to about every 20-25k/30-35k miles.
your local service center most likely does not carry 0w40 mobil 1 syn euro formula and the proper fleece filter,diy will cost you about $60 for oil and filter.
I have to laugh
here is a dealer that won't do a trans service yet changed 16 spark plugs to the tune of $$$$$$$$4-5 hundred? when they are 100k mile replacement items.You could do your own plugs for $50 and a few tools on a Saturday morning.Diy the trans(you will need the special dipstick pm me)and your 99 has a drain plug for the converter so most of the fluid can be drained out.

Just open the plug, drian the fluid, replace the Filter and Gasket, and add 3 Qts then your done.
Your will need a Universal Dipstick cost about $15 at Pep Boys or Kragen the dealer won't sell you one. Unless you find a good service shop that will give you one for a few bucks.
Oil should always be Mobil 1 Syn, I use 10-40 in all year then switch to 20-50 in the Hot Summer and go back to 10-40 in the late Fall. In the meantime my E430 runs great no worries.
Try the Lucas brand additive feels like more HP and smooth.

Mobil 1 syn is 0w40 wt euro formula for the m112 and m113 engines.
722.6 trans up to sept of 99 had torque converter drain so done properly you need far more than 3qts.
Do not add any additive to your oil.You use the wrong wt. oil and the wrong spec oil all year long. 0w40 mb spec(on the bottle)mobil 1 will do just fine all year and why anyone would change their oil 3times a year on the fss system that goes 10-12k miles between oil changes is beyond me.If it works for you ,fine.But don't post it as gospel for other members to follow,you are hurting a fine engine and when it comes time to sell the car be sure to tell the prospective buyer you used non spec oil
