Can the navigation be replaced on the 03 and on E-series?

But, you will need a new amp, speakers,and you lose Steerling wheel function, instrument panel info, possible pro-logic 7 set up and not to mention the fit and finish of after market bracket. (even if you able to get the bracket, it will still look ....terrible.)
If you must have touch screen, Nuvi 660 might be a good choice for you.

Your eclipse using old "analog" signal, that has multiple connector, such as pre-amp line, speakers F/ R Aux etc.
Fiber optic equipment, HU, Hard drive, video, internet etc.. using single "plastic tube" to transfer data via light. If you look at back of Mercedes HU, there is only ONE connector. + power, that's all. (as well as the amp)
I am sorry I am not very good in explaining this. But if you know the difference between fiber optic HD vs SCSI/SATA/IDE HD in your PC, then you should know the different. ( nope, there is no adaptor for regular HD to work w/ fiber optic interface )

The first problem would be to get the unit in mechanically. I suppose it can be done but how much money and trouble do you want to go to?
The entire audio system is involved. You will have probably not be able to use the amplifiers or other components in the system so you will have to have replace those as well. They are not all in the dash of the car but distributed around the car in different places.
Next thing involves connecting electrically. Fiber optics is used in place of electrical wiring. If you could fit some other unit mechanically, then you are going to have to provide the wiring for this. This mean running new electrical cables throughout the car.
Yes, it can be done. Will it be easy? No. Will it be cheap? No. Perhaps you should look at a car that has a nav system you like or that can more easily be modified with another unit.
