I think you need to disconnect the SBC connector to disable it so you don't loose a finger or two

Also when you have the car raised and tires off do not open any doors or activate the keyless control. It could set of the SBC and if you have the pads off and your fingers in the calipers you could loose a finger

I like my fingers.

I'd rather pay someone $$$ to risk losing thier fingers changing the brake pads to my car.

^We've reached the bottom of why I don't like doing safety system related work to my car, not for a matter of fingers as I don't have SBC but because properly working breaks seems like a nice idea

It's fairly easy to NOT open the door while you're doing this... Not to mention you would have to have open the door and then go stick your hand in the calipers to get into trouble.

You need to unplug SBC or disconnect battery before you even start either way to save yourself from the annoying error measge

Except for the SBC system, brakes are one of the easiest and highest dollar reward job on a car.

While I never recommend anyone doing their brakes without some instruction the first time, I really don't know how anyone with normal mechanical ability, and who takes the time to read up can make any "safety" related mistakes.

Does that mean my 07' also doesn't have SBC?

Because
In May 2004, Mercedes recalled 680,000 vehicles equipped with the system; in March 2005 a total of 1.3 million vehicles were recalled. Mercedes dropped the feature in higher volume models, such as the E-class. Lower luxury class volume models such as the SL, the Maybach and the SLR continued to use SBC

I'm sure I could do so with relative ease and I would like to think I have the technical understanding to be able to do so, especially considering how much time I spend reading up and learning about Mercedes vehicles and the W211, but I just have an unfounded aversion to doing this type of work on my car.

Because
Yes, if you have a 2007 model year E-Class (well there were no 2003-2006 E350s, those were designated as E320s) then you do NOT have the SBC braking system, all facelift models have a more traditional brake setup which isn't prone to pump failure and many of the really frightening things SBC has had problems with.
