I had an independent mercedes shop do my spark plugs and transmission fluid and filter service. Cost me about $1200. This was a lot cheaper than using the dealership. I did the brake fluid, engine air filter (yes, there is one) and I always do the oil and oil filter service myself.
Have an indy do the spark plugs and transmission oil replacement.
Brake fluid and engine air filter can be deferred one more year in my view. If you do all the jobs at an indy shop it will save you money. Your vehicle is not covered by warranty any longer so there is no benefit to having the work done at a dealer. I DIY'd all of these jobs except for transmission oil which I let the dealer take care of.
At least in Finland, there's definitely a benefit for doing the maintenance at an official dealer/repairer as it renews the roadside assistance and rescue assist for one year each time, up to 30 years. This is also good for resale value, in case you plan on selling the near future.
I purchased my GLE used with around 60,000 miles on it. For its first service (with me), I wanted the piece of mind that the dealership had really looked it over and gave it a GOOD servicing... So I had Mercedes to do what you are looking to do: Replace spark plugs, Oil & filter change, Transmission filter and flush, Brake fluid flush and fill, Engine and cabin air filters, replace wiper blades front and back, clean and deodorize the air conditioner (that thing STAYS musty). All of that total with tax out the door cost me $3,000. Agreed that if you know previous service has already been great before, it's time to start looking at highly rated independent shops in your area instead of the dealership. The piece of mind is nice, but that cost is crazy.
See if you can replace the oil in the TQ Converter when you do your trans service
Front and rear Diff fluid change
Cabin and Dust Filter along with the Engine Air filter
Inspect wiper blades front and rear.
Inspect brakes and suspension parts
Engine oil change?

I have a question on spark plugs I have an es350 Lexus which is also 3.5 lit producing close to 300 hp. So in that, Lexus recommends changing at 120 K as they have iridum spark plugs. Why these Mercedes spark plugs are special? unless they are using non-iridium spark plugs then it makes sense to change early but it is an expensive vehicle they should have added iridium high quality which can last for 100K at least. Something wrong with German engineering when it comes to maintenance. I remember one time they used to campaign their transmission is sealed for life then they started to provide 60 K transmission maintenance.
I like to know what kind of spark plugs GLE 350 comes with. I have 43 K miles so still have time.

I need the year of your GLE 350 are you flex or Gas?. My GLE400 is Bi-Turbo so it does not use the same part number.
2016 GLE350 Gas uses 004-159-81-03. It's made by Bosch ZR-6-SII-3320 (7430). I went to cross reference it. Double Iridium, Gap size: 0.7mm.
After some thinking. I bet since the GLE use High Pressure injectors maybe when the sparkplug wears it could be causing carbon deposit on the spark plugs. When that happen you get weak sparks or overly rich fuel mixture.
As for Transmission service nothing is sealed for life, lol. They pulled that crap on the Subaru CVT, lol. I have seen so many CVT trans swap on the Subaru due to dirty trans oil clogging up the internal filter. I was the smart one that changed the CVT fluid when I had my Subaru. The dealer would not do the service. They did sell me the trans CVT oil, lol. When I changed it. There was nothing online for direction at that time.
