what does upgrading this with this coding procedure actually do and what options do you get more with the headlights?

Since the headlamp coding is now set to EURO specifications, thereby ditching the archaic U.S. restrictions, the low beam pattern and functionality is dramatically improved, in addition to the newly added benefits of the intelligent high beams.
The low beam pattern is now dynamic, meaning that it can change according to speed and conditions. The most obvious change that I've noticed is that the low beam pattern around town is very wide, thereby illuminating the roadsides very well. I can see pedestrians, animals, basically everything. (see 1st photo below)
Whereas once I'm up to speed on the freeway, the beam pattern becomes longer and somewhat less wide, compared to in the city. (see 2nd photo below)
What this illustrates to me is how much safer and more advanced the EURO lighting specs are, compared to the severely outdated U.S. lighting regulations.
I've now been driving both my cars (W222 and X167) coded to EURO lighting for the last 5 months, through fall and winter, and I have NEVER been flashed by another motorist. So while I've been enjoying significantly improved low beam and high beam functionality, there is no perceptible dazzle or negative impact to other traffic. In a word: AWESOME!
Hope that helps!

do. New to this form, and how to find what I read.
Thank you for your help. If you could copy and paste what you're referring to or at least send me a link again I would appreciate it. I feel kind of stupid that I can't find what you're talking about but I'll learn.
