Also try uninstalling waze, restart your phone, and then reinstall it.
If that doesn't fix it, then it's a Waze or a Carplay issue.

There are a couple of things to understand with CarPlay and GPS. When using wireless CarPlay, the phone receives the GPS signal from the car to augment its own. It's mandatory per specification. The reason for that is that you may have your phone tucked away somewhere, so its own GPS receiver may not have a signal. Also, the car's position signal is generally more accurate, because if you lose line of sight to the satellites, the car continues to track your position using other sensors such as wheel speed, compass and steering angle to estimate your current position. This is extremely useful inside of tunnels. In the past, Google Maps got me completely lost when driving through the large tunnel systems that exist in Europe and I missed exits etc., but nowadays because CarPlay gets the position signal from the car, Google Maps knows where exactly I am inside of the tunnels.
With wired CarPlay, the above is optional, so depending on the manufacturer's implementation of CarPlay, the phone may not get the position signal from the car and instead has to rely on its own GPS receiver. That could be a problem if you place the phone somewhere deep down in the car where it doesn't get a reliable signal. Based on observations, I'm pretty sure that initially my 2019 C63 didn't' supply the position signal to the phone, but over time after an update to my COMAND system, it is now. I am saying these because Google Maps used to drift at times, but now the position is very accurate even driving downtown. I do know, though, that Google also improved GPS in Google Maps. They used to have some issues with it, so it's hard to say.
Anyway, with wireless GPS you are guaranteed that the phone is getting the position signal from the car, so if the issue only happens when the phone is plugged in and not when you are using wireless CarPlay, then the culprit is very likely the phone itself not being able to acquire a reliable GPS signal. If it also happens with wireless CarPlay, then the car's GPS antenna/receiver may be on the fritz. Where does the Mercedes system think you are located when your phone has this issue? That's another test to narrow down where the issue could be.
One last point, I had issues with CarPlay in the past when the phone was getting too hot while charging as it started to throttle the CPU to keep it cool. This hasn't happened with my latest iPhone 16 Pro anymore. I use the 80% charge limit as on typical days I only use about 40-50% battery and setting it to 80% ensures that the battery isn't pegged at 100% on longer trips when I use CarPlay. My car only has wired CarPlay, so it's always charging when using CarPlay. Helps with battery longevity and health. My previous phone was an iPhone XS, which didn't have the charge limit feature. Although, despite everything, the battery in that one lasted 7 years before the capacity was down to 80% and the phone started to throttle the performance. Testament to how good the battery management is in iOS.
